A pie bird is a hollow figure used to vent steam from double-crust pies, preventing spills and keeping the bottom crust perfectly flaky. Simply place the bird in the center of the bottom crust before adding the filling, then lay the top crust over it, allowing the birdâs head to poke through. As the pie bakes, steam escapes through its beak, ensuring delicious results every time.
